Ultimate Comfort Food

Once the bitter cold moves in, my desire for comfort foods completely take over and all I can think of are meals that allow me to take a rainy Saturday and munch all day.  One of those foods happen to be sheppards pie.  Infusing my LOVE of mashed potatoes with veggies and ground chicken,  put a spin on the traditional beef pie.  Continuing to break in my Kitchenaid mixer I received for  Christmas, I was finally able to use the meat grinder to grind my very own chicken which feels great knowing my ground meat has no fillers which is my attempt to lie to myself and claim this is halfway healthy.

Ingredients:

1lb ground chicken seasoned with garlic, seasoned salt, pepper, oregano
1/2 cup chopped carrots
1/2 cup chopped onions
1/2 cup frozen peas
1/2 cup frozen corn
5 medium potatoes boiled
1/2 cup heavy cream
1/2 cup chicken broth
1tbls butter
1tbls olive oil

Directions:

Add the olive oil to a heated skillet and brown the chicken until fully cooked.  remove from the skillet and set aside.
With the shavings left in the skillet from the chicken, sauté the carrots, onions, peas and corn.  Add the chicken back to the pan along with the chicken broth and let simmer for 10 minutes.

Mash the potatoes while still warm in the pot, add the butter and cream ensuring the mashed potatoes are a bit stiff.

Put the chicken mix in a baking dish, spread the mashed potatoes over the mix and bake for 30 minutes.
