1 1/2 cup chopped tomatoes
1/2 medium onion chopped
1 chicken breast
3/4 cup chopped basil
2tbls olive oil
3 tbs Italian seasoning
1/2 cup shredded parmesan cheese
fettuccine- 2 1/2 cups cooked
In a hot skillet, sautee in 2tbls olive oil the onion and garlic. Add the tomatoes, italian seasoning, salt and pepper.
Using 1 tbls olive oil, salt and pepper, blacken the chicken breast. Allow the chicken to cool, chop and set aside.
Cook the fettuccine according to pkg directions, drain and set aside.
Add the chicken to the tomatoe mixture and allow to sizzle. Add the basil and cook an additional 5 minutes.
Add the fettuccine and spring with parmesan.
