With Valentine Day around the corner and if your like myself and really don’t have an interest in having the typical date night, create your own magical meal and finish it off with a delectable desert. I’m a huge fan of cheesecake, dark chocolate and mint so I decided to incorporate the three into this low calorie (only if you eat one lol) dessert.

Ingredients: (Makes 6)
Filling
1/2 cup cream cheese
3 Tbls fresh squeezed lemon
1/4 cup condensed milk
Optional fruit toppings
Chocolate Molds
You can use molds purchased at Michaels Crafts for $2-$5
or get creative and use a mold from house hold item packaging.
Dark mint chocolate candy melts that can be purchased at Michaels Crafts or your local super market
Preparation Directions:
Place the chocolate in a zip lock bag and microwave for 30 second intervals until smooth and completely melted. Once the chocolate is melted, clip the tip of the bag and pour the chocolate into each mold to the rim.
Place the mold into the refrigerator for 1-2 minutes until a shell is formed. Pour out the melted candy from the centers and return the mold to the refrigerator to set completely.
Excess candy can be remelted and used again.
Once the chocolate has set, pop cups out of mold, trim excess candy from edges with a paring knife.
Using a hand mixer, mix cream cheese, condensed milk and lemon juice until mixture is smooth.
Spoon mixture into cups and garnish with fruit or nuts.
Grate a piece of chocolate over the filled cups as a garnish.
Refrigerate until ready to eat!
