Lately I’ve been pretty busy with little time to cook which has been completely unfair to my husband who is undoubtedly tired of eating out but would never utter the words “what’s for dinner” in fear I would quote a line from the book Equal Suffrage to Equal Rights. So I decided to make a list of recipes I’ve collected from my mother that require 30 minutes of kitchen time. This should make the guy pretty happy.
Ingredients:
1lb shrimp
1tbls dijon mustard
1tsp smoked paprika
1tsp cajun seasoning
2tbls chopped cilantro
1tsp lemon juice
1tbls jerk sauce
salt/pepper/garlic powder
1/2 small onion
2tbls coconut oil
Whole wheat tortillas
Slaw
1pkg coleslaw mix
1/3 cup miracle whip
1tsp lemon juice
salt/pepper/garlic powder
Directions:
Mix the shrimp in a bowl with the next seven ingredients.
Let sit for 15 minutes.
Sautee the onion in the coconut oil until opaque.
Add the shrimp mix and cook until complete making sure not to overcook.
Mix together miracle whip, lemon juice, salt, peper and garlic.
Add coleslaw and mix well
Heat tortillas in the microwave for 15 seconds, serve with the shrimp and coleslaw.
