Shrimp Florentine is one of those dishes that make eating pasta almost feel healthy. The most time consuming part of preparing this meal is boiling the pasta. It’s quick easy and so delish. Make sure you don’t omit the lemon juice, it adds acidity and makes all the difference in such a simple dish.
Ingredients:
8 oz linguine
2 tbls butter
1 lb shrimp
2 cloves of grated fresh garlic
1/4 cup red onion finely chopped
1 tsp tabasco
2 tbls fresh squeezed lemon juice
1 6 oz pkg baby spinach
sea salt
black pepper
1. Cook the pasta according to pkg directions, drain well, set aside and keep warm.
2. Melt butter in a large skillet, add shrimp, garlic, onion and tabasco; cook 5 until shrimp are done. Add cooked pasta, lemon juice, salt, pepper and spinach; cook until spinach is wilted and pasta is well coated, about 5 minutes.
