When it comes to breakfast food I love all in one meals like omelets and burritos which is why I absolutely love Panera’s egg souffle. It encompasses everything I love in one big fattening piece of heaven. But at 540 calories, 34g of fat and 165mg of cholesterol I could no longer do it, especially considering I prefer to save my fat and calories for dessert. Because I needed that souffle fix, I whipped up a low fat version that definitely curbed my craving.
Tools: Jumbo muffin pan
Yield: 4
Ingredients:
6 slices of turkey bacon
1 tbls brown sugar
5 eggs
2 tbls milk
1/2 cup frozen spinach
1/2 cup chopped artichokes
2 tbls chopped green pepper
2 1/2 tbls chopped onion
3 tbls chopped tomatoes
2 tbls crumbled feta cheese
Cooking spray
Directions:
1. Place the bacon on wax paper and sprinkle with the brown sugar. Close the wax paper and set aside.
2. In a bowl mix the remaining ingredients.
3. Spray the muffin pan well with cooking spray
4. Line the muffin pan with the turkey bacon and using a ladle, add the egg mixture to the muffin pan.
5. Bake at 350 for 30 minutes.
