In my quest to eat healthier, I’ve been going salmon crazy! With this dish I opened the pantry to see what’s available and created an explosion of flavor.
Ingredients
- 2 cloves crushed garlic
- 1.5 cups cooked brown rice
- Salmon 3 large pieces
- 2 bunches of spinach
- 1/2 onion thinly sliced
- 1 yellow pepper sliced
- 1 orange pepper sliced
- 1 tsp ginger
- 1 tsp basil
- 2tbls Thai green curry paste
- 1 can coconut milk
- 2 tbls olive oil
- 1tbls butter
Salmon seasoning
- Thai curry powder
- Garlic powder
- Smoked paprika
- Sea salt
- Pepper
- Smoked paprika

Cook rice according to package instructions
Sautee onion and peppers in 1/2 tbls olive oil for 1 min
Add 1 clove crushed garlic, basil and ginger
Continue to sautee for 3 minutes
Add salt and pepper
Add the coconut milk
Add the green curry paste
Simmer on low
In a skillet, add 1/2 tbls olive oil and 1 tbs butter
Add spinach
Add salt and pepper and garlic powder
Add 1 clove crushed garlic
Cook down on low for 5 minutes and set aside
In a bowl, add 1/2 tbls olive oil
Add the salmon seasoning and let sit for 10 minutes
Add 1/2 tbls olive oil to a hot skillet
Add the salmon skin down first and flip after 2 minutes
Cook the other side of the salmon to your specification
Serve with the spinach at the bottom, then rice and salmon on top.
Drizzle with sauce
