Super easy leftover chicken fried rice

This quick and easy recipe happened due to me needing to fix dinner, opening my refrigerator, chopping up leftover chicken breast, pulling out day old brown rice and figuring what can be created in 15 minutes.

Ingredients:

 2 Chicken breast cut into chunks
2 cups cooked brown rice
1/2 Onion (preferably  green onions, I had none)
1/2 cup frozen peas
2 eggs
1/2 tsp fish stock
1/2 tsp chili oil
2 tbs olive oil
1 tsp oyster sauce
3 tbls soy sauce

Directions:

Cook onion in 2 tbs olive oil until opaque
Add rice and cook on med for 2-3 minutes
Push the rice to one side of the pan, beat the eggs and add to the other side of the pan.  Scramble the eggs, and add to the rice.
Add chili oil, oyster sauce, fish stock
Add chicken and soy sauce and cook for 2-3 minutes
Add peas and cook for an additional 4-5 minutes on med/low
Remove from heat and let sit 2 minutes

Serve!
